South Sea fisheries were whaling fisheries. British ships first sailed west round Cape Horn at the southern tip of South America to hunt whales in the South Pacific in the 1780s. It was a lucrative trade that peaked in 1825 when 90 British ships hunted whales in the South Pacific but declined to 61 ships by 1835.
